Okay,

I'll start. I toasted a slice of my Sara Lee Delightful Wheat Bread under the broiler. Then I took it out and topped it with 4 slices of a Roma tomato and then a slice of mozzarella. I put it back under the broiler until the cheese melted. (approximately 125)

Okay, next...

Ya'll are making me hungry!!

Mine isn't as quick (about 10 minutes) but I'm preparing a small salad with lettuce, boiled eggs (I boiled up a few the other day), marinated tofu, garlic, onions, celery, zuchinni, cauliflower, sprinkled with raw sunflower seeds. My homemade dressing is made with Nayonaisse, garlic, onions and flaxseed oil. Gotta go eat!

This one's simple...3/4 cup of raw %100 whole grain oatmeal, a sliced banana and some 2% fat milk (eaten like a bowl of cereal). Keeps me from snacking all morning.

Oatmeal tastes better to me uncooked. So far I have 2 people in my family enjoying it better that way too.

Toast one-half of a whole-wheat English muffin. Top with Canadian bacon, a tomato slice, and low-fat American cheese. Microwave until the cheese melts.

Mash a half banana into peanut butter and spread on a whole-grain bagel. Be aware that large bagels can have up to 400 calories each, so choose a small — 2 ounce — bagel.

Mix cold leftover chicken or convenience-type chunk chicken with seedless grapes, sunflower seeds, plain yogurt and a dash of curry powder. Stuff into a hollowed-out green pepper or whole-wheat pita pocket.

Spread one-half of a small cinnamon-raisin bagel with part-skim ricotta cheese. Top with apple slices.

Layer soft mini corn or flour tortillas with shredded low-fat cheddar or Monterey Jack cheese. Microwave until the cheese melts. Slice into bite-size pie shapes.

Spread a brown rice cake with ricotta cheese and fresh strawberries or low-sugar, spreadable fruit. Or try spreading it with herbed goat cheese and sliced olives.

Top a baked potato with plain yogurt and Cajun seasoning.

Spread raisin toast with apple butter.

Spread a slice of whole-grain crispbread (Wasa crispbread, Ry-Krisp, others) with fruit-flavored low-fat yogurt or 100 percent fruit jam.

My favourite: trail mix(w/o peanuts), shredded cocounut, sliced up fruit(oranges, strawberries, pineapple, nectarine, mandarine(sp)??) and soy yogurt in a bowl. Add some sunflower seeds too ... this is really good!

olive oil, salmon steak, season salt, minced garlic in a pan about 10-15 minutes. YUM! i eat this about twice a week.

Not really a recipe but a great tip to spice up chicken breast...

Put chicken breast (skinless) in freezer bag day before with any of your favorite spices. Freeze or refrigerate it (Depending when you will use it). The next day thaw it out, bake, cut it up and add to salad or eat with vegetables

I usually buy the family size chicken breast at the store and then feeze individually with different spices.

this my crustless breakfast quiche-

combine 2 egg, 1 cup of cottage cheese, spinach and turkey ham.
Use Pam to spray baking bowl. Add combination in pan and cook for 30 minutes-
I love egg, so doing a quiche that way helps me limit the amount of egg that I eat in a week- quiche last 5 days if us eonly for breakfast-

For those on Atkins, cottage cheese may be subsitute for heavy cream.
for those on low fat, use eggbeaters instead of real eggs.
spinach may be subsituted with any other vegetable- turkey ham may be subsituted with any other meat-

1 Low fat English Muffin
1/4 Cup Egg Beaters (I like Cheese & Chive Flavor)
2 slices of canadian bacon

Scramble the egg while you're heating the muffing and bacon in the microwave (about 30 seconds). Put the egg on the muffin and there you have it...a low fat breakfast sandwich (2.5 points for you weight watchers).

1 box of angel food cake mix
1 can of crushed pineapple w/ juice

Combine all ingredients in bowl (including juice) and bake in a rectangular baking pan. Bake to package instructions...a nice little low fat desert!! (12 servings - 2 points each for WW).
