Mini veggie pizza- take a whole wheat english muffin, top with a spoonful of tomato sauce, a little part skin mozz. cheese, and sliced bell pepper, onion or mushroom and toast in the oven
Pizza Pita- you make this at work in the microwave, take ww pita, fill it with some tomato sauce and a strong cheese, mircowave and eat
Tuna Melt- again take a whole wheat english muffin, top with a little tuna salad( made with onions, celery, a little mustard and a little miracle whip) and half a piece of low fat cheese, toast in oven for a couple of minutes until cheese melts and tuna is warm, eat with a couple of apple slices
Shrimp cocktail- great snack a work, I like this with 1 cup of chopped pineapple

I find it so easy to fit in mini meals by buying all my veggies in individual packets, as well as my tuna. In addition, when I cook I put leftovers in small ziplock containers. I just grap them and go.
