I usually do a low-carb diet if my weight plateaus or I need to lose a few quickly. I'd never heard of "resistant starches' until I saw this article. I know that sometimes it's hard to find sides, or make a meal w/o including carbs, so maybe this will offer some alternatives that won't derail your diet.

The Rundown:
Potatoes get a bad rap as little more than a waist-thickening waste of calories. Thanks for posting this. I LOVE rice and potatoes. And I've never stopped eating them. I just can't let it go. I feel like the potato is natural because it grows out of the ground, so I just do it in moderation. But I must have my baked and mashed potatoes. On the other hand, I'm not into breads and sweets. This is exciting news!! :yep:

I eat a low carb 'way of life'. I've always included potatoes - just not that often.

In the article the make the case that resistant starches are most effective once the food has cooled. So something like Potato Salad with low-fat mayo would be ideal. I'm not sure of how to incorporate it into my diet, but I'm glad to have the options.

If one is doing low carb, it's best to have regular mayo (that's another plus side to low carbing). :yep:
