Today I made my first raw desert….and when I say it turned out good, I mean GOOOOOD!!! And very filling. I snatched the recipe from youtube, and modified it a little bit. It takes about 15 mins to make. Great sugar fix, healthy and tropical tasting:lick::grin:
1 cup raw almonds
1 cup pitted dates
Spoonful raisins (optional)
¼ cup dried pineapple
½ cup shredded coconut
2 tbs coconut oil
I didn’t measure the pineapple and coconut but these are approximate amts., so use your own judgment depending on your taste.
Grind the almonds with a pinch of salt into a food processor for a couple minutes into a gritty meal. Put almonds aside. Grind dates in processor until mixed into a chunky paste, put aside. Grind dried pineapple down to small chunks (It may be hard to get down depending on your food processor. Mine was $20 frm target so not the best) In a large bowl combine the almonds, dates, pineapple, half of the shredded coconut, and the coconut oil. Mix with your hands until well combined. Form into small balls. Roll the balls in the remaining shredded coconut. Eat immediately or chill for later.
I’m so exited about going raw! This turned out way better than I expected for my first recipe. Tonight I’m going to make raw zucchini noodles and pesto:lick: we'll see how that goes...
