I'm trying to add more fresh vegetables to my diet as I realize that I rarely eat vegetables from the produce isle. I usually eat canned vegetables. The only problem is, I don't know how to buy fresh vegetables on a daily basis such as how often buy them, how much to buy, how long to keep them in the refrigerator until ready to eat, where to buy. I know carrots last a long time, as do onions, potatoes. and squash. But other things such as brocolli(sp?), lettuce, asparagus, egg plant (mind you I've never tried egg plant before), and others.
I would really appreciate if anyone who buys fresh veggies on a daily basis can give me and ideal grocery shopping list. Thanks

I buy about a quarter of a pound of snap peas every two weeks. If you keep them wrapped in plastic in the crisper they'll last you a while. You can eat them at any time before they go bad. I use them in stirfry dishes. You can also try buying organic spinach. It comes fresh in a plastic container. That can last anywhere from 10 days to 2 weeks as well. I'm not a huge veggie fan so that's all I can think of in addition to the ones you already listed.

I love snap peas. How do you eat organic spinach? Do you eat it raw in a salad or in a cooked dish? I'm assuming that it would be better to eat it cooked due to the Ecoli that had contaminated spinach crops recently.

I eat it both ways. I'll eat it raw with chicken salad or tuna salad. Or I'll add it to my stirfrys or omlettes. I think the E. Coli scare has been over for a while. The raw spinach supply is safe.
